Finely dice 140 g Guanciale.
Peel and finely dice 90 g Onion.
Peel and finely dice 90 g Carrot.
Trim, wash, and finely dice 90 g Celery.
Place the diced Guanciale into a cold, heavy-bottomed pot.
Cook over medium-low heat until the fat renders for around 6 minutes without letting it get crispy.
Add the diced Onion, diced Carrot, and diced Celery to the pot.
Cook gently for 15 minutes until softened without browning.
Increase the heat to medium-high and add 600 g Minced beef.
Break up the beef with a wooden spoon and cook for 12 minutes until moisture evaporates and the meat browns.
Pour in 175 ml Dry white wine.
Simmer for 5 minutes until the wine reduces almost completely.
Stir in 1.5 tbsp Tomato paste and 300 g Tomato passata.
Pour in 150 ml Beef stock.
Reduce the heat to very low, set the lid slightly ajar, and simmer for 90 minutes, adding more of the remaining 150 ml Beef stock if the sauce starts drying out.
Pour in 175 ml Whole milk in small splashes and continue simmering with the lid ajar for another 75 minutes.
Stir in 0.5 tsp Salt, 0.25 tsp Black pepper, and 1 pinch Nutmeg.
Taste the sauce and adjust seasonings with additional salt or pepper as desired.
