Arrange a portion of sliced potatoes in a single layer on the prepared baking sheet without overlapping.
Mist the slices evenly with 1 tbsp olive oil spray.
Season the slices evenly with 1 tsp salt, 0.5 tsp black pepper, and 1 tsp garlic powder.
Bake in the preheated oven for 20 to 25 minutes until the slices turn golden and crisp.
Remove the baking sheet from the oven and repeat the layering, seasoning, and baking process for the remaining batches.
Transfer the baked chips to a bowl and let them rest for a couple of minutes to finish crisping.
