Bulgarian Banitza Triangles are a traditional pastry snack made with crispy filo pastry and a savory filling of white Bulgarian cheese, eggs, and a tangy yogurt mixture.

Prepare the Filling
In a bowl, crumble 200 grams White Bulgarian Cheese.
Add 3 large Eggs and mix until well combined.
In a small bowl, mix 1 tbsp Yogurt with ½ tsp Baking Soda and let it sit for 5 minutes.
Stir the yogurt mixture into the cheese and egg blend.
Season with Salt to taste.
Prepare the Filo Pastry
Take 6 Sheets of Filo Pastry and cut each sheet in half, yielding 12 half-sheets.
Assemble the Triangles
For each triangle, stack two half-sheets together.
Brush the top sheet with a mixture of 50 grams Butter and 2 tbsps Sunflower Oil.
Place a spoonful of the filling at one edge of the pastry.
Fold the pastry over the filling to form a triangle, rolling until fully enclosed.
Air Fry the Banitza
Preheat the air fryer to 180°C (350°F).
Place the filled triangles into the air fryer basket.
Brush lightly with extra melted butter if desired.
Air fry for 10–12 minutes until golden and crispy.
Serve
Let the banitza cool slightly before serving.
