Prepare the Veggies:
Wash the leeks, tomato, and green olives.
Cut the leek into thin slices.
Cut the tomato into cubes.
Cut the green olives into small pieces.
Mix the sliced leeks, cubed tomato, and chopped green olives together in a bowl.
Season:
Add crumbles of white cheese to the vegetable mixture.
Add tomato puree.
Season with salt and black pepper to taste.
Drizzle 1 tsp olive oil over the salad.
Serve and Enjoy!
Gently toss the salad to combine all ingredients.
Serve immediately.
