Chop and boil the potatoes into medium-sized cubes.
Chop the carrot, leek, and pepper into small cubes. Sauté them for 10-15 minutes in a pan with a little fat. Add salt to taste and dried oregano.
Mix the eggs with fresh milk, add salt and black pepper to taste.
Mix the vegetables and egg mixture in a baking dish (20 cm diameter).
Finally, add the cheese or mozzarella, sliced, and optionally sprinkle with a little more oregano on top.
Bake in a preheated oven at 180 degrees Celsius with a fan for 25-30 minutes.
