Slice the Bavarian sausages into circles.
If your sundried tomatoes aren't already sliced, cut them into smaller pieces.
Mince the garlic clove.
Cook the penne pasta in a large pot of boiling water, seasoned with sea salt, according to package instructions until al dente. Drain the pasta, reserving a little pasta water just in case.
While the pasta is cooking, heat the extra virgin olive oil in a large pan or skillet over medium heat. Add the sliced Bavarian sausages and cook until lightly browned and heated through.
Add the spinach and butter to the pan with the sausages. Cook, stirring occasionally, until the spinach has wilted and softened.
Stir in the sliced sundried tomatoes and minced garlic. Season with salt and pepper to taste and cook for another minute until fragrant.
Add the drained penne pasta to the pan with the sausage and spinach mixture.
Add the cream cheese and the shredded parmesan (50 g). Stir everything together until the cream cheese has melted and coats the pasta and sauce evenly.
Serve immediately in bowls. Garnish each portion with additional parmesan cheese and fresh basil leaves.
