Finely chop onions and dice pumpkin.
Sauté onion with a little olive oil.
Add the pumpkin and sauté briefly as well.
Cover with water and simmer for 10 minutes with the lid closed.
Chop parsley and mix with oats, silken tofu, and flax seeds.
Once the pumpkin is cooked, mix the oat mixture into the pumpkin until a moldable mass forms.
Shape the mixture into patties as desired.
Fry the patties in a pan with plenty of olive oil. The patties should be half submerged, but don't have to be completely swimming in fat.
