Easy Cheesecake (No Baking) is a creamy dessert with a crunchy butter cookie base, a smooth mascarpone-sour cream filling, and a colorful topping of fresh berries.

Prepare the Base
Crush 200 grams Butter Cookies into small pieces (a blender works fine, but don't over-process to retain texture).
Melt 125 grams Butter in a small pan over low heat.
Combine the melted butter with the crushed cookies and press the mixture firmly into the bottom of your cake tin or serving dish.
Make the Filling
In a large bowl, mix together 400 grams Mascarpone, 250 grams Sour Cream, and 100 grams Sugar.
Stir until the mixture is smooth and homogeneous. Use a fork or spoon to avoid making it too runny.
Assemble the Cheesecake
Evenly spread the filling over the cookie base using a spatula or spoon.
Decorate the top with fresh Strawberries, Raspberries, and Blueberries arranged as desired.
Chill and Serve
Refrigerate the assembled cheesecake for at least 1 hour to let it set.
Once chilled, slice and serve your delicious, no-bake cheesecake.
