PREPARATIONS
It's best to soak the beans the night before.
Put the beans in a pot and cover with water. Cook for about 2 hours or until soft. (You can find dry beans in any Turkish or African store)
Peel and finely chop the onion
Finely chop the tomatoes as well
Peel the garlic and ginger and put them in a container, mix with the curry and 1/3 of the oil.
Finely chop the spring onion and set aside
PREPARATION
Put the remaining oil in a pot, then first sauté the onion, then add the tomatoes. Briefly sauté the two ingredients, then lightly mash the tomatoes with a fork.
Then add the remaining mixed spices.
Add a little water from the beans.
Drain the beans and mix them in
Mix in the spring onion 5 minutes before serving.
Season with salt and pepper.
Serve with rice and done
