PREPARATIONS
It's best to soak the beans overnight.
Put the beans in a pot and cover with water. Cook for about 2 hours or until soft. (You can find dry beans in any Turkish or African store)
Peel and finely chop the onion.
Finely chop the tomatoes as well.
Peel the garlic and ginger, put them in a container, and mix with the curry and 1/3 of the oil.
Finely chop the spring onion and set aside.
PREPARATION
In a pot, add the remaining oil, then first sauté the onion, then add the tomatoes. Let the two ingredients simmer briefly, then lightly mash the tomatoes with a fork.
After that, add the remaining mixed spices.
Add a little water from the beans.
Drain the beans and mix them in.
Mix in the spring onion 5 minutes before serving.
Season with salt and pepper to taste.
Serve with rice and you're done.
