Cut open the avocado, remove the pit, and scoop out the flesh.
Peel and deseed the tomatoes.
Cut the avocado, tomatoes, and gherkins (optional, gherkins can be omitted) into equally sized small cubes.
Finely dice the shallot.
Finely chop the capers and parsley.
Separate the eggs and put the egg yolk into a bowl.
Carefully mix all ingredients together in the bowl with the egg yolk (the avocado should not be destroyed).
Season with mustard, salt, and spices.
Arrange the tartare mixture with a tablespoon in a small ring or similar.
Cream cheese or a homemade mozzarella cream is suitable for decoration. Simply stir until creamy and pipe small balls onto the arranged tartare with a piping bag.
