Instructions
PREPARATION
- Wash and roughly chop the zucchini
- Peel and also roughly chop the onions
- Peel and chop the garlic
- Soak cashews in water (see cashew milk recipe)
- Mix broth powder and water
NOW IT'S COOKING TIME
- Heat oil in a pot, sauté the onion in it until browned.
- Add the garlic and sauté briefly until the whole aroma is distributed.
- Then add the zucchini, also sauté until browned.
- Then deglaze with the white wine
- When the wine is reduced, then fill up with the broth
- Bring the whole thing to a boil for 15 minutes
Get ready
- Add the soaked cashews shortly before it's finished.
- Mix the soup with a hand blender
- Season with salt and pepper.
ARRANGE
- Put the finished soup in a bowl
- Chop the parsley and sprinkle on the soup as a garnish.
(If you like, you can sprinkle roasted and shaved cashew on top)
