Bring the water to a boil over high heat.

Pour 40 g of flour into a first shallow bowl.
Beat 1 egg with a fork in a second bowl.
Pour 60 g of breadcrumbs into a third bowl.
Dredge each of the 2 chicken cutlets successively in the flour, beaten egg, and then the breadcrumbs.
Pour 60 ml of vegetable oil into a skillet over medium-high heat.
Place the breaded chicken cutlets into the hot oil.
Cook for 4 minutes on each side until the breading is nicely golden brown.
Transfer the cutlets to a cutting board lined with paper towels.
Cut each cutlet into even strips.
Clean 150 g of button mushrooms with a clean cloth.
Cut the mushrooms into even slices.
Peel 2 garlic cloves.
Finely mince the garlic cloves.
Drop 400 g of udon noodles into the boiling water.
Cook the noodles for 3 minutes.
Drain the noodles in a colander.
Heat 1 tablespoon of sesame oil in a sauté pan over medium heat.
Add the minced garlic and sliced mushrooms.
Sauté everything for 3 minutes.
Add 2 tablespoons of gochujang paste and 2 tablespoons of soy sauce.
Pour in 150 ml of heavy cream.
Mix and let simmer over low heat for 2 minutes.
Add 70 g of shredded emmental.
Stir until the cheese is completely melted.
Add the drained udon noodles to the sauté pan.
Toss for 1 minute to coat the noodles thoroughly.
Divide the sauced noodles among shallow bowls.
Place the breaded chicken strips on the side of each bowl.
