This Nuri Ricotta Spread is a wonderful homage to Mediterranean cuisine, which I've had the pleasure of experiencing in many variations over the years. It combines the robust flavors of spicy Nuri sardines and milder sardines with the creamy freshness of ricotta. It's a recipe I often prepare for spontaneous guests or a cozy dinner, as it's so uncomplicated yet incredibly flavorful. The combination of salty sardines, a hint of spice, fresh lemon, and creamy texture makes this spread a real highlight on any bread or cracker. It's not only delicious but also rich in Omega-3 fatty acids, making it a nutritious choice. A real insider tip for anyone who loves something special!

Preparation
1
Boil the 3 eggs in a pot of water for about 8-10 minutes until hard.
2
Then rinse them under cold water.
3
Peel the eggs
4
Finely chop the onion
5
Halve the lemon and squeeze the juice from one half.
6
Separate the cooked eggs: Finely chop the egg whites and set them aside. The egg yolks will be added to the sardine mixture later.
Preparing the Spread
1
Put the Nuri sardines (spicy) with their oil and the other sardines (in oil) into a bowl
2
Mash the sardines with a fork.
3
Add egg yolk
4
Add finely chopped onion
5
Add 1 tablespoon lemon juice
6
Add 1 tablespoon mayonnaise
7
Season the mixture with salt and pepper to taste. Add 1 teaspoon mustard and 1 teaspoon Vegeta to round off the flavor.
8
Mix everything thoroughly until a homogeneous, creamy mass is formed.
9
Now carefully fold the ricotta and the finely chopped egg whites into the sardine mixture. Mix everything loosely so that the spread retains a nice texture.
