Peel the potatoes and cut them into roughly equal-sized pieces. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.
Bring the water to a boil, then reduce the heat and let the potatoes simmer until they are very tender when pierced with a fork, usually about 15 minutes.
Drain the potatoes well in a colander, allowing the steam to escape for a minute or two.
