Put the couscous in a large bowl.
Sprinkle with the juice of 2 lemons and about 2 tbsp water.
Loosely mix everything with a fork and let it swell for about 5 minutes.
While the couscous is swelling, wash the tomatoes and cut them into small cubes.
Peel the cucumber, remove the seeds, and also cut it into cubes.
Finely chop the small mild onion (or 1–2 spring onions).
Mix the diced tomatoes, cucumber, and onion into the swollen couscous.
Add the raisins and the finely chopped dried apricots.
Wash the mint and parsley, dry them, and finely chop.
Add the chopped herbs to the bowl with the couscous and vegetables.
Peel and finely chop or grate the garlic, and add it.
Drizzle the olive oil over the salad.
Season with salt and pepper to taste and mix all ingredients thoroughly so everything is well distributed.
Cover the bowl and put the salad in the fridge for at least 30 minutes. Let it chill there so all the flavors can develop wonderfully.
