Soak black-eyed peas in water for 24 hours, ensuring they are fully submerged.
Drain the beans and put them into a blender.
Add the ginger and salt and blend everything finely.
Finely chop coriander and add it. (do not blend further)
Form the mixture into dumplings with a spoon.
Heat the oil and deep-fry the formed dumplings until really brown and crispy.
Finally, pat them dry with kitchen paper.
My recommendation is to serve them with peanut sauce as a dip, in the traditional Madagascan style.
If you don't like coriander, you can use chives instead.
