Let the butter soften at room temperature.
Brew half a liter of filter coffee (or more as you like) and let it cool.
Separate the eggs.
Whisk the egg yolks with sugar over a double boiler until frothy.
Mix mascarpone, pistachio paste, and the frothy egg yolks in a bowl.
Add vanilla powder.
Add the soft butter and mix everything well again.
Fold in half (25g) of the chopped pistachios.
Line the bottom of a mold of your choice with ladyfingers. Soak them in filter coffee as desired.
Spread the pistachio mascarpone mixture over the ladyfingers.
Repeat until everything is used up. Smooth the top with mascarpone mixture.
Sprinkle the remaining chopped pistachios over the smoothed surface as decoration.
Let the tiramisu chill in the fridge overnight or for at least 3 hours. Serve cold. Enjoy!!!
