These pancakes are a delicious and easy breakfast or dessert option. They are made with a simple batter that is cooked until golden brown, then topped with caramelized peaches and other fruits as desired.

Separate the eggs:
Separate the 3 large Eggs, placing the egg whites in one bowl and the egg yolks in another.
Whisk the egg whites:
With a mixer, whisk the egg whites until they become fluffy and form soft peaks.
Mix the yolks:
In the bowl with the egg yolks, add the 25 ml Milk, Vanilla Extract, and 1 pinch Salt. Whisk to combine.
Add the egg yolk mixture to the egg whites, along with the 1 tsp Baking Powder and 1 tbsp Flour. Mix until a smooth batter forms.
Cook the pancakes:
Heat a pan over medium heat and add 1 tbsp Butter.
Pour a small amount of batter into the pan.
When bubbles appear on the surface, flip the pancake and cook until golden brown on both sides.
Repeat with the remaining batter.
Prepare the peaches:
Drain the 2 Peaches (Canned) and slice them.
In a small saucepan, cook the peaches with 1 tbsp Butter and 1 tbsp Brown Sugar until caramelized.
Serve:
Serve the pancakes warm, topped with the caramelized peaches and other Fruits as desired.
