Spinach-Cheese Banitza is a savory pastry filled with a delicious mixture of sautéed Spinach, crumbled Feta Cheese, and eggs blended with Yoghurt and activated with Baking Soda. Made with a pack of Puff Pastry for a rich, flaky texture, this dish is perfect for breakfast, brunch, or a light meal.

Sauté the Spinach
Melt 50 grams Butter in a pan over medium heat.
Add 300 grams Spinach and cook until wilted (about 3–5 minutes).
Season with Salt, Pepper, and Garlic Powder to taste.
Remove from heat and let cool slightly.
Prepare the Yogurt Mixture
In a bowl, combine 500 ml Yoghurt and ½ tsp Baking Soda.
Stir well and let sit for 3 minutes until bubbly.
Mix the Filling
In a large bowl, beat 4 large Eggs until light.
Add the sautéed spinach and crumble 500 grams Feta Cheese into the bowl.
Season with Salt, Pepper, and a pinch of Garlic Powder.
Pour in the prepared yogurt mixture and stir until fully combined.
Assemble the Banitza
Preheat the oven to 160°C (320°F).
Unroll the Pack of Puff Pastry on a lightly floured surface.
Cut the pastry into squares or rectangles, as desired.
Place a spoonful of the filling in the center of each piece.
Fold the pastry over the filling to form triangles (or your preferred shape), pressing gently to seal the edges.
Bake the Banitza
Arrange the assembled banitza pieces on a greased baking tray.
Bake in the preheated oven for about 40 minutes, until golden and crispy.
Serve
Allow the banitza to cool slightly before serving.
