Bulgarian Banitza is a savory pastry that embodies the rich culinary traditions of Bulgaria. This delightful dish features flaky filo pastry layers generously brushed with melted butter, filled with a luscious mixture of eggs, white Bulgarian cheese, and yogurt. Baked until golden and crisp, banitza offers a perfect balance of tender, tangy filling and crunchy layers, making it an ideal snack or breakfast treat.

Prepare the Filling
In a large bowl, beat 6 large Eggs.
Crumble 400 grams White Bulgarian Cheese into the eggs.
Add 500 ml Yogurt and mix well.
In a small bowl, combine 1 tsp Baking Soda with a little of the yogurt mixture and let it sit for 5 minutes.
Season with Salt to taste and stir until well combined.
Melt the Butter
In a small saucepan or microwave, melt enough Butter until completely liquid.
Set aside the melted butter for brushing the filo pastry.
Prepare the Filo Pastry
Lay out 12 Sheets of Filo Pastry on a clean surface.
Cut each sheet in half, yielding 12 half-sheets.
For each triangle, stack two half-sheets together.
Brush the top sheet lightly with the melted Butter from Step 2.
Assemble the Banitza
Spoon a portion of the filling evenly over the buttered filo layers.
Roll the filled filo into a log.
Coil the log into a spiral or triangle shape until the filling is completely enclosed.
Place the assembled banitza into a greased round baking pan.
Repeat the process with the remaining filo sheets and filling until the pan is full.
Bake the Banitza
Preheat the oven to 180°C (350°F).
Bake the banitza for about 40 minutes, or until it is golden brown and crispy on top.
Serve
Allow the banitza to cool slightly in the pan.
Slice into pieces and serve warm as a delicious snack or breakfast.
