Banana Muffins are soft, moist treats made with ripe Bananas and brown Butter.

Brown the Butter
Melt 100g Butter in a small pan over medium heat.
Cook until the milk solids separate and turn brown.
Remove from heat and let cool.
Prepare the Wet Ingredients
In a large bowl, mash 3 ripe Bananas with a fork.
Add 2 large Eggs, 1 tsp Vanilla Extract, and 1 tbsp Honey (optional).
Mix until well combined.
Mix Dry Ingredients
In another bowl, whisk together 200g All-Purpose Flour, 1 tsp Baking Powder, 1/2 tsp Baking Soda, and 1/2 tsp Salt.
Combine Wet and Dry Ingredients
Gradually stir the dry ingredients into the banana mixture until just combined.
Mix in the cooled brown butter.
Fill the Muffin Tray
Grease a 12-muffin tray or line with muffin cups.
Spoon the batter evenly into the cups.
Bake the Muffins
Preheat the oven to 180°C (350°F).
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
Cool and Serve
Let the muffins cool in the tray for 5 minutes.
Transfer to a wire rack to cool completely.
