Tender large onions are gently hollowed out and stuffed with a savory blend of ground beef and nutrient-rich quinoa, enhanced with aromatic herbs, tomato paste, and a hint of cumin. Prepare the Onions
Bring a pot of water to a boil.
Add 10 large onions and cook for 10 min until softened.
Remove and let them cool.
Carefully peel away the inner layers to create hollow spaces for stuffing.
Cook the Quinoa
In a separate pot, cook 100 g quinoa according to package instructions.
Drain and set aside.
Make the Filling
Finely mince 1 garlic clove.
In a pan, heat a drizzle of olive oil over medium heat.
Sauté the garlic for about 1 min until fragrant.
Add 250 g ground beef and cook until browned.
Stir in 2 tbsp tomato paste.
Season with salt, black pepper, and 1 tsp cumin.
Mix in the cooked quinoa along with freshly chopped parsley, dill, and thyme (to taste).
Stuff the Onions
Gently fill each hollowed onion with the beef–quinoa mixture.
Place the stuffed onions in a baking dish.
Bake the Filled Onions
Preheat your oven to 180°C.
Drizzle a little more olive oil over the onions.
Bake for 30–40 min until the onions are tender and the filling is cooked through.
Serve
