Enjoy a burst of Italian flavors with this easy Pasta with Sun-Dried Tomato Pesto recipe. Fresh sun-dried tomatoes and a rich, nutty pesto perfectly complement 1 pack spaghetti for a satisfying meal in just minutes!

Cooking the Pasta and Prepping the Tomatoes
Boil 1 pack spaghetti in salted water until al dente (follow package directions).
Before draining, reserve 1 cup of the starchy pasta water.
Finely chop 120 g sun-dried tomatoes.
Blending the Pesto
In a blender, combine:
30 g pistachios
20 g cashews
10 g pine nuts
A handful of fresh basil
2 tbsp olive oil
100 g Parmesan
Juice of ½ lemon
Salt and white pepper to taste
Blend until the mixture is smooth and creamy.
Combining and Serving
Toss the hot spaghetti with the blended pesto.
Stir in the chopped sun-dried tomatoes.
Gradually add the reserved 1 cup of pasta water to form a silky, creamy sauce.
Serve immediately and enjoy your delicious pasta dish!
