Egg Preparation:
In a bowl, mix 2 eggs and season with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon chili flakes.
Pan Preparation:
Heat a non-stick pan over medium heat.
Rub 1 tablespoon butter all over the pan to create a non-stick, buttery layer.
Cooking the Egg:
Pour the seasoned eggs into the hot pan and cover with a lid.
Cook for about 1 min, until the bottom sets.
Adding the Burrito Wrap:
Place 1 burrito wrap in the pan, directly on top of the semi-cooked egg.
Carefully flip the egg and wrap over so that the egg now cooks on top of the burrito.
Adding the Fillings:
Once the egg is on top of the burrito, add 1/2 cup cherry tomatoes (halved), 1/2 cup cucumber (diced), 100g salami (sliced), and 1/2 cup Bulgarian white cheese (crumbled) on top of the egg.
Wrapping and Serving:
Fold the burrito in half to enclose the fillings.
Cook for another 1-2 min until the cheese is melted and the wrap is golden.
Transfer the wrapped burrito to a plate.
Cut it in two, creating two sandwiches, and serve immediately.
