Add a few drops of oil to each dough portion and flatten them into round mini-pizzas with a tablespoon. Leave the edge slightly higher and form a wide hollow in the middle for the topping.

Heat some oil in a pan, fry the veggie mince for 3 minutes, then add the pureed sauce. Let everything simmer briefly.
Spread 1–2 tablespoons of the mince mixture evenly into the hollow of the dough rounds. Then bake the mini-pizzas for 25 minutes at 200 °C in the preheated oven.
While the pizzas are in the oven, slice the cherry tomatoes, peel the cucumbers lengthwise with a vegetable peeler or mandoline, and roughly chop the parsley.
