I'm really hooked on these corn fritters! They're nice and crispy on the outside and wonderfully juicy on the inside – simply a dream. Together with the fresh mint dip, it's a delicious combo that's definitely going to be on my lunch table again soon. The best part: You just mix all the ingredients easily in one bowl, so there's hardly any effort and little washing up. You can be flexible with the veggies – I chose bell pepper and spring onions and thought this combo was really tasty! The cheese perfectly rounds off the delicious corn fritters. One of my new favourite recipes!

Mix flour, egg, water, and baking powder and let the batter rest briefly.
Cut one red bell pepper into fine cubes, slice two spring onions into rings, and finely chop about 10 sprigs of parsley.
Add corn, the chopped vegetables, and two handfuls of grated cheese to the batter. Mix everything thoroughly and season with salt and pepper.
Heat 3 tbsp oil in a pan and fry the fritters for about 3–4 minutes per side until golden brown.
Mix 300 g yogurt with finely chopped mint leaves (to taste), 2 tbsp lemon juice, and ½ tsp salt.
Take the fritters out of the pan and arrange them with the refreshing mint yogurt. Enjoy!
