These Vegan Apple Fritters are perfect for cosy, rainy autumn days. Crisp apple slices dipped in spiced pancake batter and fried to golden perfection make for a warm, comforting snack. Enjoy them fresh with a dusting of powdered sugar, or coated in a delightful mix of sugar and cinnamon paired with a cup of hot tea or cider, as the rain softly taps against your window.

Peel and core the apples, then slice them into 5 mm thick rings. Set aside.
Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl. In another bowl, beat the egg, then mix in the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until smooth.
In pan, heat about 1 tbsp of oil over medium heat.
Dip each apple slice into the batter, ensuring it’s fully coated, then carefully place it in the hot oil. Fry a few slices at a time, turning occasionally, until golden brown (about 2-3 minutes per side).
Immediately after cooking the pancakes on the pan, place them in the sugar-cinnamon mixture, coating both sides.
